Pumpkin Whoopie Pies



Thank the good Lord for Kelly Suzanne Sundberg, best friend forever (and I mean it when I say that). She has brought back such a joy to my life, now that she's living in PA. A double bonus is that her adorable son, Solomon, is just a few weeks behind Eva in age, and they are the bestest playmates already.

With that being said, Kelly and I have taken on fall crafts in order to ease our separation anxiety from summer. Three weeks ago we started with a fall wreath, courtesy of Martha Stewart. The wreaths were a ton of fun to make and look even better hanging on our front doors.Last week we set the kids loose in the kitchen while we baked Pumpkin Whoopie Pies. My mom passed down a family recipe to us and we set ourselves up for a fun afternoon. Here's a look at what we did:After cracking the eggs, we folded in the dry ingredients. The kids fiddled with magnets on the freezer and set up "Home Alone" like traps for us to step on.Time to lick the batter!The last step: bake the top and bottoms so that we could stuff them with cream cheese filling. Delicious and perfect for a fall treat!
