The wind is blustery.
Coats are a must and the flannel sheets are necessary.
It's that time again. S O U P. It's what's for dinner.
This week I have made 2 soups and tomorrow will be a 3rd. I have 2 new recipes to share and an old favorite. These will warm your soul. Rally the kiddos and the hubs to the table, and surprise them with the rich flavors.
Promise.
1. Creamy Broccoli-White Bean Soup
I ask Brandon every week, "Is there anything you're hungry for?", while I'm making out the grocery list and planning meals. He rarely chirps in with a suggestion, but this week he had a few ideas. I LOVE that. Cooking someone a meal that you know they are craving? It's like giving a gift you know made the wish list.
This soup is super healthy, yet tastes creamy because of the pureed beans. Delish!
2. Creamy Chicken and Wild Rice Soup
I know what you're thinking, "Creamy again?". Stop right there. Just make it. You will be begging for more. And I quote, "This is the best soup you have ever made!", he said. Insert happy wife.
I changed the recipe a bit, cooking all the vegetables at the beginning with my chicken (I cheated and picked apart a rotisserie). I made the cream in a separate sauce pan and added the spinach to the cream before mixing with the chicken and vegetables. Oh yeah, I forgot to buy wild rice, but I had Jasmine rice at home. Stir together all of those mix-ups and you get, "The best soup I ever made!".
3. Cheeseburger Soup
You want to talk comfort foods? Go get your jammies on, because this soup is the ultimate best friend. To make it even more savory, I ladle it over MASHED POTATOES. Yup. I do. It is fabulous
Not. Gonna. Lie.
Sometimes I even use good 'ol american cheese instead of cheddar. Don't judge. I warned you it was comfort food.
